In the setting of a former textile folk high school, Højhuset in Herning has now reopened as a stylish hotel. The dining hall, once actively used by the school's students, has today been transformed into an atmospheric eatery.
Communal Dining
Every Monday and Wednesday, communal dining is held at the red long tables in the Dining Hall. Monday’s dish is entirely plant-based, while Wednesday’s dish combines greens with meat. With its own farm in the backyard, kitchen gardens, and livestock, Højhuset follows a farm-to-table philosophy, and the day’s harvest largely determines how the seasonal and daily menu is composed.
The menu is announced on Facebook and Instagram the week prior.
Banquet Menus
The restaurant serves four seasonal banquet menus based on Danish, organic, and primarily local ingredients. With its own farm in the backyard, greenhouses, kitchen gardens, and livestock, Højhuset creates meals following a farm-to-table philosophy, where the day’s harvest plays a significant role in defining how the seasonal and daily menu is composed.
